Diabetic-Friendly Turkey Meatloaf Meatballs

  • Place the ground turkey, chopped red onion, green bell pepper, minced garlic, egg, crushed pork rind crumbs, Italian seasoning, and salt and pepper to taste into a large bowl. Mix thoroughly by hand until fully combined.
  • Shape the mixture into evenly sized meatballs and arrange them on a well greased air fryer tray.
  • Cook in the air fryer at 400°F for 12 to 15 minutes, or until browned and cooked through.
  • In a small bowl, stir together the sugar free ketchup and brown sugar substitute.
  • Brush the ketchup mixture over the tops of the meatballs and return them to the air fryer for an additional 1 to 2 minutes before serving.
  • Oven option: Bake at 400°F for 20 to 25 minutes, or until fully cooked through.
