Place the ground turkey, chopped red onion, green bell pepper, minced garlic, egg, crushed pork rind crumbs, Italian seasoning, and salt and pepper to taste into a large bowl. Mix thoroughly by hand until fully combined.
Shape the mixture into evenly sized meatballs and arrange them on a well greased air fryer tray.
Cook in the air fryer at 400°F for 12 to 15 minutes, or until browned and cooked through.
In a small bowl, stir together the sugar free ketchup and brown sugar substitute.
Brush the ketchup mixture over the tops of the meatballs and return them to the air fryer for an additional 1 to 2 minutes before serving.
Oven option: Bake at 400°F for 20 to 25 minutes, or until fully cooked through.
