Diabetic-Friendly 90 Second English Muffin Breakfast Sandwich

Ingredients
  

For the English Muffin:

  • 1/4 cup almond flour
  • 3 tablespoons heavy whipping cream
  • 1 teaspoon baking powder
  • 1/2 teaspoon dill
  • 1/2 teaspoon garlic powder
  • 1 egg

For the Sandwich:

  • 1 egg scrambled
  • 1 slices bacon
  • 1 slice cheese

Optional:

  • 1/2 avocado sliced

Instructions
 

  • Prepare the scrambled egg and bacon, then slice the avocado and cheese. Set aside.
  • In a small bowl, combine the almond flour, baking powder, dill, and garlic powder.
  • Add the egg and heavy whipping cream, then whisk until smooth.
  • Pour the mixture into a greased ramekin or microwave safe mug.
  • Microwave on high for about 90 seconds, until the muffin is set.
  • Remove the muffin from the ramekin and slice it in half horizontally.
  • Layer the scrambled eggs, bacon, cheese, and avocado between the two halves.
  • Serve immediately.
