Ingredients
  

For the Salad:

  • 2 cups shredded rotisserie chicken
  • 4 cups chopped iceberg lettuce
  • 1/2 cup cherry tomatoes halved
  • 1/2 cup diced cucumber
  • 1/4 cup red onion thinly sliced
  • 1 ripe avocado diced
  • 4 slices cooked bacon chopped
  • 1/4 cup crumbled feta cheese

For the Honey Mustard Dressing:

  • 3 tablespoons Dijon mustard
  • 2 tablespoons sugar-free honey
  • 3 tablespoons olive oil
  • 1 tablespoons fresh lemon juice
  • Salt and pepper to taste

Instructions
 

  • In a large bowl, combine the chopped iceberg lettuce, halved cherry tomatoes, diced cucumber, thinly sliced red onion, diced avocado, chopped bacon, and shredded rotisserie chicken.
  • Gently toss to distribute the ingredients evenly.
  • Sprinkle the crumbled feta cheese over the top.
  • In a small bowl or jar, add the Dijon mustard, honey, olive oil, fresh lemon juice, salt, and pepper. Whisk until the dressing is smooth and fully emulsified.
  • Drizzle the honey mustard dressing over the salad and toss gently until everything is well coated. Serve immediately.
